Chef unveils new menu for Yan
Chef Yan Ruijun has more than two decades' experience in preparing Japanese cuisine, and he has designed the new menu for Yan, a cozy Japanese restaurant. His signature dish is red wine-stewed foie gras with eel sushi without rice, which is wrapped only with nori. The crisp nori goes well with the soft foie gras and eel. His pan-fried foie gras and beef topped with fried garlic is another highlight because of the juiciness of the beef, the richness of the foie gras and the crispiness of the garlic.
