Chicken Feet and Peanut Soup
1 large pork bone, blanched
2 cups raw peanuts, soaked
8 chicken feet, cleaned and clipped
2 Chinese red dates (jujubes)
Place everything in a large pot and add enough water to cover the ingredients.
Bring to a boil, skimming off froth and scum.
Lower the heat and simmer for 45 minutes to an hour or until peanuts and chicken feet soften. Season to taste and serve hot.
