Given that the hotel has a long history of serving foreign heads of state, it attaches special importance to its culinary offerings, which must be able to please a wide variety of palates, Ma says.

"We send our staff members abroad to become well-versed in the latest international trends shaping the hospitality industry, especially in F&B," he says.

At the same time, the hotel maintains rigorous hygiene standards in its kitchen to ensure all food is delicious and safe, Ma says.

White tiles in the kitchen, rather than the typical red found in other hotels, ensures dirty spots are easily visible, he says, while each refrigerator has a dedicated staff member responsible for its upkeep.

Since his arrival a year ago, Ma has seen through a total of 80 projects, focusing on upgrading and beautifying the hotel's grounds and facilities.

Another unique strength of the hotel is its massive conference hall, which includes a 700 sq m space (the Flower Hall) and a 200 sq m meeting room featuring furniture arrangements in the style of China's Great Hall of the People, lending the spaces a distinctive stately feel. Additionally, a high-ceilinged banquet hall called Cymbidium (a type of orchid) adorned in classic Chinese red and gold is an ideal venue for an important dinner. The building also includes a function hall used for foreign and Chinese leaders to engage.

Many foreign leaders, dignitaries and businesspeople have praised the hotel's ballroom facilities, Ma says, adding that the Shanghai Cooperation Organization's inaugural meeting in 2001 was held at the hotel.

Naturally, the hotel's guestrooms are rich in character, featuring a tasteful blend of Western and Chinese styles.
